STORY

This natural processed coffee comes from Kevenka Coffees in Mt. Ijen, East Java. Java has a long history with coffee cultivation. The Typica variety was introduced to the island by the Dutch in the early 19th century, and the region became known for producing washed coffees, distinct from the wet-hulled coffees of other parts of Indonesia, such as Sumatra, which are often recognized for their earthy, woodsy, and rustic profiles.

Brothers Kenny and Kevin Soewondo founded Kevenka Coffees with a vision of producing distinctive, high-quality coffees that stand apart from the commercial coffee sector. At their mill, coffees are carefully separated by processing method and profile. Kenny oversees daily operations and sales, while Kevin leads planning and quality control.

Sourced from 300-500 farmers on Mt. Ijen, ripe cherries are hand-picked, color-sorted at the Botolinggo Village mill, and fermented in sealed tanks for two days. The coffee is then dried on patios under 60% shade for 7-10 days before undergoing hulling, screen sizing, density separation, and color sorting at the dry mill.

The high elevations and rich volcanic soils of Mt. Ijen contribute to the coffee's distinctive character. This marks Temple's fourth year offering Java Mt. Ijen, and it continues to be a team favorite. We feature the natural processed lot as a Single Origin Espresso for its rich body and vibrant fruit-forward profile, while the Natural Anaerobic lot delivers an even more intense expression that pairs perfectly in Wonderblend.
